Oatmeal, Banana, Walnut Bread

1/4 cup of unsalted butter at room temperature
2/3 cup of honey
1 large egg
1 1/2 cups of banana, mashed
1/4 cup of buttermilk
1 tsp vanilla
1 tsp baking powder
2 tps baking soda
1/2 tsp salt
1 cup of Oatmeal
1 1/2 cups of whole wheat flour
3/4 cups of walnuts coarsely chopped

Method :- Preheat oven to 350 degrees F. In a medium sized bowl, cream together butter and honey until smooth. Beat in egg. Stir in the bananas, buttermilk and vanilla, mix well. In a separate bowl, combine the oatmeal, flour, baking powder, soda, salt. Add this to the creamed mixture and continue to stir well and then add in the walnuts. Spread the mixture into a buttered loaf pan 9X5X3 inches. Bake for about 50 minutes. Cool on wire rack.

On Monday, Sara and I decided to bake some bread based on the recipe on the back of her tin of Oatmeal, in order to finished the Oatmeal actually. I wrote down the ingredients and went to Megamall to shop for them. Most were easily found except for Buttermilk, which took me a while, but I found it in Cold Storage, in Gardens. I did’t know the difference between Baking Powder and Baking Soda, but a quick call to Kim Ann helped, and she told me the other name for Baking Soda was Sodium Bicarbonate! Mixed the all together but didn’t have enough bananas, so the bread didn’t come out that great, a little dry.

    so does the bread taste good besides the dryness? I want to try too…but the buttermilk is so expensive lerrr..I usually substitute with just fresh milk..

    I usually don’t have buttermilk as well in the house and don’t buy in case I can’t finish. Here’s an alternative you can use next time. I usually use this:-

    add 2 tablespoons of lemon juice to 1 cup milk and let it rest for 5-10 minutes. walah.. you have buttermilk! =)

    you can either double the portion or half it depending on how much you need.
